Generally, the process uses the global positioning system (GPS) to help identify the location of the catch that the shellfish are marked for.

First, to execute the labelling system, each and every fishing boat should have an artisanal GPS location device which allows communication between the boat and satellites. Thanks to GPS the boats’ whereabouts at sea can be spotted, and that information is then sent to a monitoring center based in Santiago. The labeling system there issues a barcode label to certify each catch based on the report from the monitoring center. Then the catch is transported to processing plants where raw shellfish are made into products ready for consumption. Subsequently, the finished products are sent to local outlets and loaded onto airplanes for shipping abroad. Finally, the shellfish reach customers at home and abroad with internationally recognized labels on their packages.
